
From fresh yellow bent neck squash

To mashed potatoes, (well, really mashed squash but it tasted buttery like mashed potatoes). Shhh! Don't tell my kids. My husband even liked them. He thought it was a little yellow for mashed potatoes but tasted similar.

Hint: I added about a teaspoon of milk to make it have a creamy texture which isn't on the recipe. Also, make sure to drain water out thoroughly.

From acorn squash

Mine didn't look exactly like the picture but it tasted good.

I think I used a little less maple syrup than was pictured.
